Enjoy a Cool Design Treat at Scooped at Square One

The Canadian chain Demetres is beloved for its craft ice cream and dessert creations. When they decided to open Scooped, an ice-cream shop in Square One Shopping Centre in Mississauga, Ontario, they called upon Kilogram Studio, a Toronto-based architectural firm. Kilogram Studio founder Kfir Gluzberg knew his team could do something cool—ice cold, in fact.

The ice cream at Scooped must have stainless steel covers to protect the dairy ingredients from UV light. “Without the visual of the colorful ice cream,” Gluzberg says, “the design needed to work that much harder to provide an exciting experience.”

To accomplish this, he looked to optical illusions like foreshortening and trompe l’oeil to increase the impact of the 463-square-foot space. He placed the main counter at an angle that follows the traffic circulation of the mall’s central corridor.

Additionally, because they couldn’t show off the ice cream, they made the cones the star. Perforations in the counter’s stainless steel paneling give them pride of place while allowing a peek into the custom waffle iron as it presses proprietary patterns into the freshly-made waffle. A custom pastry case shows the finished products.

Perimeter walls are finished in a textured, coral microcement, which casts a warm pink hue throughout the space. Bourbon oak accents complement the pink hue throughout the ice cream shop. Curved, partial-height partitions offer definition across the front counter while a hidden door to the left of the registers reveals a merchandise freezer.

The Kilogram Studio team also applied a mirror film to standard 4mm clear fluted glass and installed the shimmering surface throughout the space. “We want to encourage patrons to take photos with their ice cream while in the shop,” Gluzberg says. “These intriguing mirrored surfaces are a signal to that.”

As a figurative cherry on top, they even installed a vanity-style mirror against the bar opposite the register. “It’s the last point of contact with the store, designed to be encountered with the cone in hand,” Gluzber explains. Just like its ice cream, every design detail at Scooped is perfectly delicious.
